Which cheeses are harmless?

by Kenan Pasha (2020-10-30)

Which cheeses are harmless?

The Federal Office of Public Health (BAG) and the Swiss Society for Nutrition (SBU) make the following recommendations for the consumption of milk and milk products to avoid infection with Listeria monocytogenes (listeriosis) during pregnancy:

Avoid raw milk and soft and semi-hard cheeses made from raw, thermized and pasteurized milk

The consumption of extra hard and hard cheese from raw, thermized and pasteurized milk is harmless. Remove the bark.

Only milk and milk products (yogurt, etc.) that have undergone pasteurization, high pasteurization or UHT treatment should be consumed.

Other dangerous foods: raw food, raw or undercooked meat and raw fish and seafood, but also vegetable foods (e.g. pre-cut salads)

Ensure good kitchen hygiene, correct storage temperature and the expiry date of the products.

It is important to know that listeria can develop at low, even very low temperatures: they multiply at temperatures between 0 and 45 ° C! They are sensitive to heat and are destroyed during cooking (30 minutes at 60 °).

It has been shown that the product categories "milk", "soft cheese", "semi-hard cheese" and "extra hard and hard cheese" cannot answer all questions about the consumption of milk and milk products during pregnancy. For exaple ; Can I eat blue cheese during pregnancy? Therefore, an extended list is given below:

The consumption of the following milk and milk products should be avoided during pregnancy:

Raw milk and raw cream

Butter made from unpasteurized cream or from unpasteurized cheese whey

Semi-hard cheese made from raw and pasteurized milk (e.g. Tête-de-Moine, Tilsiter, Leerdamer, Fol Epi, unmelted raclette)

Lubricated cheese from raw, thermized and pasteurized milk (e.g. Limburger, Rocamadour, Munster cheese, Appenzeller)

Soft cheese made from raw, thermized and pasteurized milk

Blue cheese

Cheese in lumpy form, seasoned and unseasoned (e.g. formaggini, sheep and goat cream cheese, aperitif cheese)
